Contemporary Japanese Restaurant & Sushi Bar
A Taste of the Tides
Discover highly creative Japanese cuisine and spectacular sushi as LANAI Bar & Lounge, our stylish seafront hangout, is transformed into SHIO, a vibrant new Japanese restaurant and sushi bar in Koh Samui.
SHIO, which means “sea tides” in Japanese, is helmed by Wacharun Imarramsak, also known as Chef Run. He’s the culinary innovator from In the Mood for Love, the popular Bangkok sushi bar and omakase restaurant. Now, he will dedicate a full month to creating fun, flavorful, and finely crafted Japanese delights in a stunning tropical setting. Chef Run specializes in creating eye-catching sushi rolls with a Western twist, such as the signatures, Wave Rider and High Tide. You can look forward to these dishes being available at SHIO Japanese restaurant in Koh Samui.

Unparalleled Freshness
One of SHIO’s defining qualities is delivering unparalleled freshness in its seafood, with premium fish flown in directly from Japan. From buttery Chu-toro to delicate Hamachi, every piece is carefully selected to ensure the highest quality and flavor. Chef Run handles the premium selection of fish with precision, allowing guests to savor the authentic taste of Japan right here at our sushi bar in Koh Samui. Each bite promises the essence of the ocean and is a true reflection of SHIO’s commitment to offering the finest ingredients available.
Our extensive selection of sushi rolls includes signature varieties such as Samui Song, a sublime blend of barbecued eel, crab, cucumber, ebiko, and cream cheese invented especially for Kimpton Kitalay Samui, Sassy Salmon, which showcases spicy salmon and ebiko wrapped with seared salmon, and Negi Toro Hand Rolls with chopped toro, pickles and scallions.
Mouth-watering Main Courses
Our mouth-watering main courses include Gindara Saikyo Yaki (grilled black cod with Chef Run’s homemade miso) and the Fish of the Day, sourced locally and cooked to perfection. With a choice of enticing appetizers, signature rolls, sashimi, nigiri, and main dishes, every guest can satisfy their culinary cravings or discover new taste sensations.
SHIO also presents an array of appetizers such as Salmon & Lemon (thinly sliced salmon sashimi with ponzu sauce) and Maguro Kimchi (fresh tuna sashimi marinated in spicy kimchi), mouth-watering main courses including Gindara Saikyo Yaki (grilled black cod with miso), and Chirashi Don (assorted sashimi served over sushi rice), as well as a sublime selection of Sashimi and Nigiri. Guests can also discover four all-new menu items which have been added exclusively for 2025.
For its highly anticipated return, SHIO has expanded its repertoire with four exclusive new menu items that are sure to tempt even the most seasoned sushi aficionados, including Shiromi Ponzu, a delicate dish of thinly sliced shiromi sashimi paired with zesty ponzu sauce; Tide Turner, a delightful roll of BBQ eel, cream cheese, and cucumber topped with sesame and teriyaki sauce; Ocean Heat, a spicy and bold combination of salmon and cucumber elegantly finished with sesame; and Scallop Shore, a luxurious roll featuring scallop, cucumber, ebiko, and spicy sauce.
Welcome to SHIO
Stylish and sophisticated yet also warm and friendly, our Japanese restaurant will blend the rustic-chic ambiance of a Samui beach lounge with the authentic elegance of a Tokyo sushi bar. The gentle sound of the ocean waves will be accompanied by a musical background of cool Japanese beats.
“SHIO’s success was undeniable, and we’re bringing it back! Guests and locals alike loved Chef Run’s signature rolls, main dishes and, most notably, our fresh seafood imported directly from Japan. From January to May, this extended residency offers authentic Japanese cuisine lovers the chance to enjoy SHIO’s refreshed menu featuring exciting new dishes, while welcoming first-timers to experience this unique concept. We’re overjoyed to showcase fresh, premium ingredients in dishes that bring a taste of Japan to the heart of Samui,” said Paul Loader, General Manager of Kimpton Kitalay Samui.
